Despite being a fan of these RPGs and Gundam mecha, I myself was never a huge fan of the Gundam anime series. *ducks for cover*
The first gundam series I watched was Gundam Wing on Toonami. I personally wouldn't recommend starting there, as the overall plot and pacing is, honestly, rather bland, despite the awesomeness of Duo, Trieze, Zechs, and Dorothy characters (as 2D as they may be).
Second series I watched was G Gundam. If you're a fan of series like DBZ, Bleach, Naruto, YuYuHakusho, or other such action-based anime you'll probably like this. It does fall into the same traps as those animes though, and fails to break the mold. More of the same, whether you love it or not.
Third series I watched was 08th MS Team. Short, sweet, and relatively well done. Yes, the main character needed a few swift kicks to the balls, but the general plot and supporting cast more than make up for this, and do a good job of presenting a sidestory to a much larger conflict.
Forth series was 0083. Same pros and cons as 08th, in all honesty.
Fifth series was the original Mobile Suit Gundam. Has its moments (primarily the 5 minute asides with Bright Noa or Char Anzable), but most episodes fall prey to the Sentai/Power-Rangers formula of "Monster of the Week, Gundam smash!". Not bad, but honestly not a good starting point, and more for actual fans of the franchise.
Sixth series was F91 (movie, series, whatever). Not bad. Nothing memorable, but for the 1.5-2 hours it runs, a decent watch. Not a good starting point though.
7th series was CCA. I hated this film with the passion of a thousand suns. Even if you liked it, not a good starting point, as it relies on the backstory of Mobile-Suit Gundam and Zeta/ZZ Gundam.
8th series was 0080. Not a fan, but was nice to see a focus more on the civilians and pilots than just random new mecha (well, aside from a certain bland Gundam design and awesome Zeon design). Not a good starting point, most series are not like this one honestly, sans for an episode or two.
9th series was X Gundam. Good starting point. Sadly, the series' cancellation rushed the ending, and it shows, but they did a nice job otherwise. It does fall into the same traps as Mobile Suit Gundam though, but is generally faster paced.
The rest I've watched more piecemeal. Obviously, Zeta/ZZ/IGLOO/Unicorn shouldn't be watched until after Mobile Suit Gundam. TurnA, SEED, Victory, G-Savior, and 00 should only be watched by fans of the other series, as each tends to get bland and/or slow too often.

In summary, pending on your flavor, I'd say start with X Gundam, G Gundam, 08th MS Team, or 0083, followed by MSG, Wing, and the other UC-series. I'd save TurnA, SEED, 00, and G-Savior for last, if you liked the other ones.
