Taijutsu
While Taijutsu ability itself does not count as a Jutsu, many primarily Taijutsu abilities require an augmentation of some kind via Chakra, so they become Jutsus in their own right. These, a brief description, and any applicable game schematics, will be listed here.

Note: The links on the names are to clips of them from Naruto-fan.com Please don't view them over and over and over, as we're technically stealing their bandwidth.

Cherry Blossom Blizzard

This jutsu is an interesting ranged attack combining exploding tags and kunai. The ninja throws several tag-laden kunai at the target, in such a way that if the kunai are dodged or blocked they will land around the target. The ninja then sets off a final tag and throws it at the targets feet, arranging it so that the one explosion sets off all the others. A simple, yet effective jutsu, an enemy caught in it can take quite a lot of damage. Unfortunately, this technique will use up most, if not all, of the explosives in a standard weapons pack.

Copycat

Copycat is a Sharingan exclusive skill designed by Hatake Kakashi. Using the insight abilities of the Sharingan, Kakashi watches his opponent and mimics him with exact precision while he's doing a Jutsu with hand seals. The result is that the opponents Fireball is instantly replicated by your own, they both hit each other, and cancel out. This ability exactly is why Kakashi is known as Konoha's "Copy Ninja".

Dance of the Crescent Moon

Using quick movements, Bunshins, Genjutsu, and all manner of other tricks, the Ninja creates a large number of clones of himself that each have after images, attacking from different angles. This move is much more fluid than simply using Bunshin while attacking, and is much harder to block or dodge.

Detector Kunai

Another simple trick, this allows you to create and carry Kunai that give off a message straight to you when thrown. Good for team operations and tactical situations, if used properly it can be invaluable to a squad leader.

Divine 64 Strikes and Divine 128 Strikes

An extremely powerful combo using Byakugan and the Jyuken fighting style, its name pretty much says what it is. The ninja uses chakra to momentarily increase speed, memorizes the location of each of his opponents Tenketsu, and then moves extremely quickly, hitting each of them in one fluid combo. Extreme experts with the Byakugan have even increased this to the Divine 128 Strikes, allowing you to go after two opponents at the same time, or get one twice over, juts for added insurance, as people with enormous amounts of Chakra have been known to be able to force open their Tenketsu.

Gatsuuga

A favorite move of the Inuzuka clan, and usually combined with their Beast Form technique and ninja dogs, the ninja will use their chakra to temporarily give themselves a speed boost, jumping at their opponent and doing small hits, scratching, biting, whatever, to cause a lot of nearly unblockable superficial damage. The idea is to create enough superficial damage that the enemy will be unable to defend against a primary attack.

Haridoku

More of an "advanced advanced weapon tricks", this skill allows ninja to tie kunai, shurikens, or needles to hidden parts of their body. Arms, legs, mouths, whatever, and work the knots or mechanisms just so that they can launch them with a flick of the wrist or whatever. Good for surprising opponents.

Jyuken

A Byakugan specific ability, this is a special combat style where the ninja specifically strikes for the bodies Tenketsu, or chakra holes. Every person has 64 Tenketsu in different places, that control where chakra can flow in the body, and by striking and pressing your own chakra into them, you can stop the flow. The Byakugan allows a ninja to see Tenketsu, and they can then do pretty nasty things with this ability. Close a Tenketsu in your opponents hand, they cannot mold chakra through that hand, which will make them much weaker with it.

Kama Itachi

Using the power of a stroke of a weapon and increasing the resulting airflow with your Chakra, you can create a sort of attack wave through the air. A very simple move, this can range hugely in effectiveness, from scraping a tree with a knife-thrown Kama Itachi and small chakra used, to Temari using her gigantic fan to cut through multiple trees.

Kyoten Chiten

Another Sharingan exclusive skill, this skill is only usable when you're being targetted by a Genjutsu, and you can make eye contact with your opponent. It instantaneously reverses the Genjutsu, placing it on themselves while using their own Chakra. It is uncertain how this works, but then again, the Sharingan is a mysterious thing.

The Lotus of Konoha

A Forbidden technique, this skill has eight "levels", and while your average superninja knows the first, Maito Gai is the expert on the other 7. Chakra flow in the body is regulated by nine "Gates" in the brain that prevent you from using too much at one time and involuntarily hurting yourself. With enough practice, however, these gates can be shut down and ignored, allowing for extreme amounts of physical exertion, at the drawback of each punch and kick damaging your body. Once you learn this skill, RP and practice with it will allow you to unlock more gates, all the way up to the ninth. Unlocking the eighth gate is said to kill the user.

For game schematics, there are two ways to use the Lotus. You can use the first gate for a few seconds for a boost to a single attack (Gai tends to do this a lot, combining it with the Initial Lotus Taijutsu Combo). This will lower your maximum stamina by 1. Or you can stay in a Lotus for the entire fight. Each level you wish to unlock will raise your Taijutsu by 1 for that fight (this can raise your Taijutsu beyond 10), but will reduce your maximum stamina by 2 per level used at the end of the fight.

The Power of Youth!

Ok, this isn't a skill, I put it up just because. Each ninja in Gai's squad can learn this once, and it ups their stamina by 5. Because Gai is the ultimate trainer in the POWER OF YOUTH!

Twin Rising Dragons

This move utilizes a pair of large scrolls, covered to the brim with thrown weapon seals. The user places both on the ground, at which point they shoot to the air in smoke, carrying the user with them. As the user falls to the ground they grab each weapon on the scroll, simultaneously throwing dozens of kunai, shuriken, and other assorted goodies at their opponent. It makes for quite the ranged barrage, although you can only use it while you have large weapon scrolls to burn.
